Stufato alla Milanese (Stewed Beef)
Ingredients: Rump steak, bacon, ham, salt, cinnamon, pepper, cloves, onions, butter, Burgundy.
Pound a piece of rump steak to make it soft and lard it well. Then cut up some bits of fat bacon and disperse them over with pepper, salt, and a bit of cinnamon. Now put them on the steak. Add three cloves into the steak. Then put it into a stewing pan. Add a little of the fat of the chopped up beef, an ounce of butter, sliced up onion, and some bits of lean ham. Put in sufficient stock to wrap the steak, add a glass of Burgundy. The whole thing needs to be stewed until it gets completely cooked.
